Produced using the same technique behind Taiwan’s celebrated honey black teas, the oxidation process results in a natural honey sweetness and a delicate floral quality. This tea blend has minimal tannins, and softly aromatic qualities that happens to be made entirely from cultivars made in Saitama. The blend changes year to year, drawn from up to nine Saitama-bred cultivars, whichever were ready for black tea production that harvest, making each batch a one-season expression of what the region’s distinctive genetics can do when processed with this level of intention.

This hojicha is made from the stems of tencha, the same carefully shaded leaf that becomes matcha, then roasted until it opens into something entirely different.
