Mie Hojicha
This hojicha is made from the stems of tencha, the same carefully shaded leaf that becomes matcha, then roasted until it opens into something entirely different. The roasting process results in a high, toasty aroma reminiscent of barley tea, without any bitterness. The flavor is intentionally light, clean and thirst-quenching rather than rich and heavy. It can be paired alongside a meal, after grilled meats, paired with sweets, or chilled and poured over ice in summer.

Yame is where Japan’s finest gyokuro is made. Tucked into the mountains of southern Fukuoka, morning mists roll in from the surrounding rivers, wrapping the tea fields in a natural veil that softens sunlight and builds the deep sweetness and umami Yame is known for. The farmers who work here have been refining their craft across generations.
Our Yame partner is one of those generational farms. A family operation over a century old, working some of the most demanding tea in Japan. They grow an exceptional range of cultivars — Saemidori, Tsuyuhikari, Kirari 31, Okumidori among them and bring that same precision to sencha, matcha, and wakocha. Every tea they make reflects the same conviction: that Yame tea, made well, is unlike anything else in the world.

Heat 200ml of water to 185°–195°. Combine with 5–6g of leaf.

TIP
Use near-boiling water — hojicha is roasted and needs heat to open fully. Pour over the leaf and steep briefly.
The tencha stem base makes this smoother than most roasted teas — it can handle a longer steep without turning bitter.
